Creamy Avocado Sauce Recipes

Avocado. This fruit has taken the world by storm as being THE health craze.

Some background information (just for the geeks like me) - First grown in mexico and had been part of their diet and culture for thousands of years before the Spanish actually brought the avocado to Europe including US! Avocados are the most popular foods of this decade with profits in the millions and the demand being at it peak for distribution and growth of the particularly weird and exotic fruit (once described as an alligator pear tree!)- is this weird how I totally understand why it was?🙆

So history lesson is over, now for food technology time😛

So just mashing a avocado can be great- but lets get some creative juices flowing with something different. My creamy avocado sauce recipe uses 2 main ingredients and some extras to give it a flair and flavour (wow I feel like Jaime Oliver with all these adjectives!!)

May I add these are perfect for students too👍👍👍

The recipe

(for one portion)

-1/2 Avocado

- 1 tbsp Quark

That's it!?!?!??!?!?!??!?!?

Quark? Is this the sound of a posh duck! (Yes- the meme is hilarious!) Quark is a healthy version of cream cheese with it being naturally fat free and high in protein (did I mention it's super cheap). Great as a substitute for Philadelphia.

How to use it?

some of my favourite meals that I use this avocado sauce in

Courgette Spag Bowl with Avocado Sauce

(for 1 person)

Ingredients

-1 Courgette

-1/2 Avocado / 2 tbsp Quark}- the sauce

- 1 tin of tuna

-1/2 lemon

-1/2 tsp of lazy garlic (because I'm lazy okay!!)

-80g Edamame Beans

Method

1) peel the courgette into long strips (like spaghetti)

2) add the courgette and garlic to a hot pan and stir fry for about 5-10 minutes 3) whilst courgette is cooking, mash the avocado, add the quark and bend into a blender until liquid (but not runny)

4) once bended add the lemon juice and give a little stir

5) add the edamame beans, tuna and avocado sauce to the pan and stir around until everything is coated. 6) Dinner is served!💁

Avocado on toast with eggs with feta

Ingredients

-Rye bread

-1/2 Avocado / 2 tbsp Quark}- the sauce

- 1 egg

- 20g feta

Method

1) mash the avocado with the quark

2) boil water in pan until bubbling

3) place the egg in and wait 2-3 minutes

4) set the rye bread in the toaster 5) add the avocado cream on top of toast, add the eggs and sprinkle the feta

BAM! The food is served 💁

Avocado on toast with soya beans and pumpkin seeds

(Vegan version)

Avocado on toast with soya beans and pumpkin seeds

Ingredients

-Rye bread

-1/2 Avocado/ Lemon juice }- the sauce

-80g soya beans

-1 tsp pumpkin seeds

Method

1) mash the avocado with the lemon juice

2) cook the soya beans (as instructed)

3) add the beans to the avo sauce 4) toast the rye bread 6) sprinkle the pumpkin seeds

5) add the beans and sauce

BAM! The food is served 💁
